Tlayuda tortilla with edible Mexican Chapulines (grasshoppers).
This is a Tlayuda and is a form of tortilla from Oaxaca Mexico mainly, is cooked like a pizza, but tortilla thin and crisper, the filling is beans and cheese sometimes mole or yellow mole, like in this case, the yellow sauce we see is yellow mole or amarillo, on top of it chapulines or grasshoppers.
After being thoroughly cleaned and washed, they are toasted on a comal clay pan and they are prepared with garlic, lime juice and salt containing extract of agave worms, lending a sour spicy salty taste to the finished product.
Sometimes the grasshoppers are also toasted with chili, although it can be used to cover up for stale chapulines.
